You didn't put the screen.clear() at the start of the draw function, and that's why the text is drawn over each other. So it should be:

draw = function()
  screen.clear()
  screen.drawText(i, 0, 70, 25, "#FFF")
  screen.drawSprite("sprite", 0, -20, 120, 120)
  screen.drawSprite("coin", 30, 70, 35)
end
